Soft & Easy Three Ingredient Oatmeal Cookies

I love my daily caffeine fix and lately I have felt a craving for a sweet addition to my afternoon delight. So I went on a hunt for an easy, no-fuss, healthy and delicious cookie to satisfy the sweet tooth. I came across a number of recipes on Pinterest which called for just three basic ingredients, ones which I happen to have in my kitchen on a daily basis.
After a few tests and trials, I believe I have come up with the best recipe for these soft and easy three ingredient oatmeal cookies that are ready in the same amount of time it takes to make a cup of tea.
Prep time: 5 minutes
Baking time: 15-20 minutes
Yield: 6 cookies
2 large ripe bananas
1 cup of oatmeal
1/3 cup of dark chocolate chips (can mix or substitute for raisins, cranberries, pecans, etc…)
1 small pinch of pink Himalayan salt
Optional: 1/2 teaspoon of cinnamon
All ingredients should be at room temperature
Pre-heat oven to 350 degrees Celsius, 662 degrees Fahrenheit.
In a large mixing bowl, mash the two large ripe bananas into a smooth purée with a fork. For best results, I recommend using very ripe and large bananas, ie., the riper the banana, the softer and moist the cookies will be.
Next, add the one cup of oatmeal, pinch of salt and cinnamon, if desired, to the bowl of mashed bananas. I recommend using fine oatmeal. I used steel cut oats so a quick whirl through the food processor did the trick to make the oats finer. You can also use a blender and pulse for 5-10 seconds.
This is the fun part! I like to mix up the dark chocolate chips with some sweet raisins. Alternatively, you can skip the chocolate chips and add just raisins, cranberries, white chocolate, nuts, etc…
Add what you’ve got in the pantry and experiment! I would imagine some grated carrots, lemon and ginger or apple would make for a delicious cookie, which I will have to test and report back on in the future.
On a baking sheet lined with parchment paper, distribute the cookie dough into six even portions.
You can choose to make them smaller or larger but I found that six makes for the perfect portion and works best with the recommended cooking time.
Bake in the oven for 15-20 minutes or until golden brown on the bottom.
Once you determine that they are baked, take them out of the oven and transfer them to a cooling rack or if you’re like me, devour as quickly as possible without burning any body parts!
